I love making soups. Something about how the flavors meld together in the pot soothes me. And I love eating soup, especially in the winter. <\/span><\/p>\n<div><span>\u00a0<\/span><\/div>\n<div><span>I was dying to make this soup in particular, so I mixed together a few recipes that I found online- and the results were delish. <\/span><span>It&#8217;s low fat, and takes less than an hour to make, Word to the wise: Don&#8217;t add the rice and eggs until about 20 minutes before serving, otherwise it will get mushy. <\/span><\/p>\n<div>\n<div><span><br \/>\n<\/span><\/p>\n<div><span><span><br \/>\n<\/span><\/span><\/p>\n<h5><span><span><span>INGREDIENTS<\/span><\/span><\/span><\/h5>\n<div><span><span><span>10 cups chicken stock<\/span><\/span><\/span><\/div>\n<div><span><span><span><span>1 shredded rotisserie chicken<br \/>\n1 1\/2 cups of white rice<br \/>\n4 tbsp. olive oil<\/span><\/span><\/span><\/span><\/div>\n<div><span><span><span><span>1 onion (chopped)<br \/>\n2 carrots (chopped)<br \/>\n2 stalks celery (chopped)<br \/>\n1\/2 teaspoon oregano<br \/>\nsalt and pepper to taste<br \/>\n2 eggs<br \/>\n2 lemons (juice)<br \/>\n1 handful dill (chopped)<\/span><\/span><\/span><\/span><\/div>\n<div><span><span><span><span>\u00a0<\/span><\/span><\/span><\/span><\/div>\n<div><span><span><span><span><span><br \/>\n<\/span><\/span><\/span><\/span><\/span><\/p>\n<h5><span><span><span>DIRECTIONS<\/span><\/span><\/span><\/h5>\n<div><span><span><span><span>1. Sautee onions, carrots and celery in pot until golden brown.<\/span><\/span><\/span><\/span><\/div>\n<div><span><span><span><span>2. Add Chicken, oregano, salt and pepper.<\/span><\/span><\/span><\/span><\/div>\n<div><span><span><span><span>3. After 2 minutes, add chicken broth.<\/span><\/span><\/span><\/span><\/div>\n<div><span><span><span><span>4. Bring the soup to a boil and simmer.<\/span><\/span><\/span><\/span><\/div>\n<div><span><span><span><span>5. 20 minutes before eating, add rice to pot. Cook 15 minutes, or until rice is tender.<br \/>\n3. Take the pot off the heat.<br \/>\n4. Whisk the eggs in a bowl until frothy.<br \/>\n5. Whisk in the lemon juice.<br \/>\n6. Slowly whisk in some of the liquid from the soup to temper the eggs.<br \/>\n7. Mix the avgolemono sauce into the soup.<br \/>\n8.
